GLOBAL Knives

GLOBAL knives from the Japanese brand Yoshikin are among the best kitchen knives in the world. Their iconic design and distinctive appearance make these knives unmistakable. The original design was created in 1983 by Japanese industrial designer Professor Komin Yamada. His task was to develop a unique and revolutionary knife. Yamada used the best materials and designed a functional and attention-grabbing knife shape. Thus, the GLOBAL kitchen knife series was born. These knives were a sensation in terms of design, quality, and sharpness back then, and they still are today. International professional chefs and home cooks swear by GLOBAL knives.

The brand's economic success also speaks for itself: The G-2 chef's knife from GLOBAL is one of the world's best-selling kitchen knives. The G collection offers the largest selection in the range with a whopping 35 blade shapes. These knives are relatively light and allow for fatigue-free work. All GLOBAL knives are also well-balanced. The perfect balance between blade and handle is achieved by filling the handle scales with fine sand. The punched dots on the handle - the trademark of GLOBAL - serve both aesthetics and better grip, especially with wet hands. Another plus point of most GLOBAL knives is their smooth, seamless construction. This prevents food residue from accumulating. These knives are easy to clean, meet the highest hygiene requirements, and have a long service life.

The blades of GLOBAL knives are made of rust-resistant Cromova 18 steel. This special alloy allows the blades to be sharpened very thinly without sacrificing stability. Through ice-hardening, GLOBAL blades achieve a sharpness level of 56-58 Rockwell. The steel has long-lasting sharpness and is extremely resistant to corrosion.

The GLOBAL Knife

From the beginning, the focus of GLOBAL knives has been on optimizing them for professional use. The knives should be precise, enable fatigue-free work, meet strict hygiene requirements, be easy to care for, and of course, be sharp and durable. Sounds complicated, and it was. But the problem was solved with flying colors, as a knife was created that actually exceeded all expectations.

Blades made of Cromova 18 steel

After several tests, Cromova 18 steel has proven to be the preferred blade material. Cromova 18 steel is a special alloy of the well-known chrome-vanadium-molybdenum steel. Due to the special alloy, GLOBAL knives can be finely sharpened without sacrificing stability, despite the hard steel. Additionally, the steel gives the edges high durability. With ice hardening, the blades achieve a hardness of 59 HRC (+-1), including high resistance to rust. Each GLOBAL knife is handmade and sharpened in the Japanese knife forge in Niigata.

Handle filled with sand

The handles of most GLOBAL knives are also made of steel. To ensure perfect balance between blade and handle, the handles are filled with sand. The stamped dots, the distinguishing feature of GLOBAL, were not only added for appearance. This allows you to hold and guide the knife safely without cramping, even with wet fingers. Smooth contours and seamless construction prevent dirt buildup and make cleaning easier. The optimum in hygiene is thus given.

If you prefer wood as a handle material, you don't have to say goodbye to GLOBAL knives. With the Global Bunmei knives, you can find knives with a handle made of honoki wood, a Japanese magnolia wood.

The Range

The agony of choice is difficult because the selection is huge. The clear advantage, however, is that almost every wish can be fulfilled. A little help is the division of GLOBAL knives into different series:

GLOBAL G- & GS-Series

The G-Series offers the largest selection with over 35 blade shapes. Here you will find blade lengths from 16 cm upwards. The blades are stamped and then sharpened by hand. The knife backs are rather fine and the knives are lighter.
The GS-Series is the shorter version of the G-Series. Here you will find all the small and indispensable helpers with a blade length of up to 16 cm. The blades are also stamped, the knife back is fine.

GLOBAL GF- & GSF-Series

The GF-Series also includes blade shapes starting from 16 cm blade length. However, the blades are forged with a wider knife back. Fans of wider and heavier knives will get their money's worth here.
As with the GF-Series, GLOBAL also offers shorter variants with the GSF-Series. (We couldn't make it more complicated and confusing, sorry!). In the GSF series, you will find forged blades, but with a fine knife back, but generally slightly heavier.

GLOBAL SAI Knives with Hammered Surface

The GLOBAL SAI knife series is an extension of the already proven GLOBAL series. In this series, there are 21 blade shapes to choose from.

The tried and tested CROMOVA 18 steel with a hardness of 59 degrees Rockwell (+-1) is used as the steel for the GLOBAL SAI knives. The core is surrounded by two layers of slightly softer, rust-free stainless steel SUS410. GLOBAL calls this combination Cromova 18 Sanso steel. This stainless steel coating makes the knife even more stable and protects it against breakage, rust, and discoloration. A slightly flatter sharpening angle gives the SAI knives an even higher sharpness while maintaining maximum stability.

The hammered surface on the blade, called Tsuchime, provides improved cutting performance in addition to the impressive appearance: small air pockets form during cutting, reducing friction. The cutting material adheres less to the blade and the blade glides more easily through the cutting material.

The hollow handle of the GLOBAL SAI series made of stainless steel has been redesigned and fits particularly well in the hand. The ergonomic shaping and grip grooves allow for highly precise guidance and controlled cutting.

GLOBAL NI Knife in Oriental Shape

With the new NI series, GLOBAL currently offers highly sought-after knives in oriental shape. The curved upper blade tip is characteristic of these knives. The symmetry of the cutting edge is identical to that of the classic knives. The blade material, grind, and hollow handle are also identical, with the handle receiving an adapted design. The GLOBAL NI series offers 22 blade shapes.

GLOBAL Bunmei Knife with Honoki Wood Handle

Lovers of knives with wooden handles will find what they're looking for with the GLOBAL Bunmei knives.

The blades are identical to those of the classic series, but are sharpened slightly differently. This makes the knives even sharper, but also slightly more delicate.

Unlike the classic series, the handle of the Bunmei series is made of Honoki wood, a Japanese magnolia wood. With double-edged knives, the handle is symmetrically shaped. The single-edged knives, such as the Sashimi, Deba, and Usuba knives, are shaped in the classic Japanese chestnut form.

The GLOBAL Bunmei series offers 20 variations, mostly Japanese blade shapes, but also some European blade shapes.
