de Buyer Cookware

de Buyer Prima Matera – Induction-compatible copper cookware

The “de Buyer Prima Matera” series made of copper is one of the best cookware in the world. International star chefs swear by these professional products “made in France”, as do experts and neutral testing institutes. The Prima Matera pots, pans, saucepans, and sauté pans impress with their excellent heat conductivity and resulting precise “manageability”. This allows the desired frying temperature to be achieved and maintained very precisely – an ideal prerequisite for demanding preparation processes. Because “cooking to perfection” is an essential requirement that upscale gastronomy places on professional cookware.

Two-millimeter-thick walls made of copper with a thin layer of stainless steel on the inside provide perfectly uniform heat conduction and temperature distribution. This composition of 90% copper, 10% stainless steel, and a ferromagnetic base ensures outstanding, consistent cooking results on all types of stoves. This makes the cooking process extremely homogeneous. And not just on the bottom of the pot, but also on the sides.

Keyword “ferromagnetic”: Since copper is not magnetic, conventional copper pots cannot be used on induction cooktops. To take advantage of the benefits of copper cookware on induction stoves, magnetic stainless steel is applied to the bottom of the de Buyer Prima Matera series pots. This base then heats up and transfers the energy to the pot without loss.

de Buyer Affinity – Stainless steel cookware made of 5-layer material

The "Affinity" collection made of 5-layer stainless steel-aluminium material is de Buyer's top series in the stainless steel cookware sector. With Affinity, two layers of stainless steel - matt on the inside, mirror-polished on the outside - enclose a continuous core of aluminium and aluminium alloys. The aluminium core extends to the upper edge of the pan or pot in all items. This design guarantees a very homogeneous heat distribution and ensures that the food is heated evenly not only through the bottom but also through the sidewalls. Affinity pots and pans heat up extremely quickly and allow for so-called precise cooking: The hyper-reactive multi-layer material responds immediately to temperature changes and transfers them directly into the pot interior. This advantage is particularly noticeable when cooking on an induction stove. This allows for absolutely precise cooking to the point, a requirement from haute cuisine for professional-grade cookware.

The Affinity cookware is very versatile: It allows for searing, deglazing, and then stewing or keeping warm in the oven, as the ergonomically shaped handles are made of riveted stainless steel casting, so they are heat resistant. In addition, the series is durable, robust and suitable for all types of stoves.

de Buyer Mineral B – Iron Cookware

Iron pans

Steaks, fried potatoes, pancakes, crêpes and - with a little practice - even fried eggs turn out perfectly in the "Mineral B" iron pans from de Buyer. Iron has ideal heat conduction, heats up quickly and reaches high temperatures. In addition, you can fry precisely in iron pans. The 2.5 – 3 mm extra thick steel of the de Buyer Mineral B series is suitable for all types of stoves including induction. Pans made of iron have a real and original personality. This authentic character combined with the best frying properties is the reason why we at Butch appreciate and love the Mineral B iron pans from de Buyer. In addition, they can be used very versatilely. The prerequisite for cooking success is: Bring a little spirit of discovery and the openness to engage with the peculiarities of an iron pan. We admit: Handling it requires a little practice, but then you are sure to have found THE pan for life with a de Buyer Mineral B iron pan.

We are impressed by the fact that iron pans get better the more often they are used. Especially in today's times, sustainability is more valuable and essential product characteristic for us than ever. The unique seasoning of the pan before use and each subsequent use create a natural protective layer, the so-called patina. It takes on the taste of the prepared dishes and acts as a kind of flavor enhancer in subsequent frying processes. This patina also creates a natural non-stick effect and simultaneously serves as rust protection.

Keyword „seasoning“: The seasoning of iron pans is a necessary procedure before you use the iron pan for the first time. We at Butch offer you – for a small fee – a seasoning service: This way, you can order your desired de Buyer Mineral B pan already seasoned from us. In the shop, this is indicated by the note „seasoned“ in the product description. With a seasoned pan, you can start frying immediately without any preparation.

In our magazine, we have compiled detailed information on the topic of iron pans for you:

Woks

The woks of the de Buyer Mineral B series are also made of iron. Iron can withstand high temperatures and is therefore ideal as a material for stir-frying. Iron woks have optimal heat distribution: While very high temperatures prevail at the bottom, the heat deliberately decreases in the edge areas. De Buyer woks are available with typical Cantonese handles, i.e. two short, loop-shaped handles that are opposite each other, or with a stick handle and – for larger specimens – with an additional counter handle. In addition to classic stir-frying, you can use a wok for cooking, steaming, frying, braising and even deep-frying. However, pure iron wok pans like the models of the Mineral B series from de Buyer are more specialists when it comes to the topic of „stir-frying“, i.e. classic stir-frying.

de Buyer Baking Accessories & Patisserie Supplies

The de Buyer range also includes extensive baking accessories as well as special equipment for confectionery and upscale patisserie: steel baking tins with non-stick coating, flexible silicone moulds, stainless steel baking frames, baking trays and baking mats.

A favourite baking helper of our crew: The reusable de Buyer silicone baking mat with non-stick effect. The 40 x 30 cm mat is essentially a thick fibreglass cloth with a coating of food-grade silicone. This means you can confidently do without disposable baking paper in the future. The silicone coating gives the baking mat excellent non-stick properties. The durable baking mat is also temperature resistant from -40°C to +250°C. This makes it multifunctional for baking, cooling and freezing. The baking mat is suitable for sweet pastries such as cookies and biscuits, as well as for savoury baked goods like pizza and tarte flambée.

Baking tins in traditional shapes, such as the de Buyer bundt cake tin made of non-stick coated steel, add a touch of nostalgia. The 0.4 mm thick steel conducts heat excellently during baking and distributes it evenly - this allows particularly good baking results to be achieved. The mould is scratch-resistant, resistant to fruit acids and neutral in taste. Thanks to the non-stick coating, the cake can be released in no time at all and the mould is easy to clean.

Our declared Butch Darling in the baking accessories sector is the "de Buyer Le Tube", a real all-rounder. With this professional kitchen syringe, you can create spritz cookies in a variety of shapes. But not only cookies and biscuits, also sweet creamy starters and savoury appetisers can be arranged and served like in a star restaurant. Layered desserts in a glass are becoming increasingly popular. Their visual effect depends very much on how cleanly you get the individual layers into the glass. With "Le Tube", filling cream, whipped cream, yoghurt and quark becomes child's play.

de Buyer Kitchen Utensils

de Buyer GÖMA – Universal whisk with plastic handle

The de Buyer GÖMA universal whisk is a jack of all trades and is suitable for mixing, beating, fluffing and emulsifying. The special feature: With the GÖMA collection, the ends of the wire loops extend far into the handle. This quality feature ensures an extra level of stability. This allows these whisks to also stir thicker, semi-solid foods well. The handles not only have an ergonomic shape, they are also coated with non-slip plastic.

de Buyer Patisserie Stainless Steel Bowl with Silicone Bottom

The de Buyer kitchen bowl is a stirring, beating & working bowl made of brushed stainless steel in the best professional quality. Robust, resistant to deformation and almost indestructible. Inside, the bowl is almost completely rounded, allowing for edge-free stirring. It has measurements in various units (Ltr, ml, Cups & Oz.). The silicone bottom prevents slipping, the wide rim ensures a good grip. This all-round pouring rim also makes it easier to pour out the contents. Stainless steel is the most commonly used material for mixing bowls in the catering industry. Due to the hard, smooth surface, these bowls are hygienic, easy to clean and permanently dishwasher safe. Stainless steel is aroma-neutral and does not absorb odours, nor does it allow for discolouration. With the right care and handling, stainless steel bowls are extremely durable.

Conclusion: If we were to summarise in one sentence what we think makes the de Buyer brand so special and what the products of the renowned manufacturer stand for, we would think of a famous quote by Jean Jaurès: „Tradition is the transmission of the fire and not the worship of the ashes.“ De Buyer skilfully combines traditional values of cooking with today's demands for innovative cookware.
