Güde Knives

The Güde manufactory was founded in 1910 by Karl Güde. Quality has always been the top priority of the company philosophy. Therefore, the Güde knives were forged from a single piece of steel using drop forging, hand-sharpened, fitted with handles, and honed. Franz Güde, the son of Karl Güde, took over the manufactory and focused on developing new cutting edges and sharpening methods. Groundbreaking innovations such as the serration on bread slicers and cold cuts machines were his inventions. The Güde wave edge from 1941, which revolutionized bread cutting, also came from his pen.

With the takeover of Dr. Karl Peter Born, a grandson of Franz Güde who still runs the Güde company today, new times began. The range was expanded, new shapes and handles were added, which gained worldwide attention and recognition. However, one thing was never neglected: Only the highest quality knives without compromise leave the factory in Solingen.

This way of thinking, where only the highest quality counts, not quantity, is no longer a matter of course today. Forging knives of high quality and in small quantities by hand has been, is, and will remain the philosophy of Güde - now for four generations and without any compromises. Güde is committed to the centuries-old art of knife making, which also established the reputation of the city of Solingen.

Prestigious Awards and Prizes

In recent years, numerous Güde knife series as well as individual knives have been awarded the Design Plus Prize and the Red Dot Design Award, among others. Selection criteria for the awarding of such prizes include, for example, the degree of innovation, aesthetic quality, feasibility, functionality and usefulness, economic efficiency, as well as the emotional content of the design concepts.

The Production & Quality of Güde Knives

Since 1910, Güde knives have been forged from a single piece of steel in the worldwide knife capital of Solingen. The special mixture of the steel is crucial here: chromium provides rust resistance, molybdenum & vanadium provide good cutting ability. Güde is a so-called drop forge. The heated blanks are shaped in dies, similar to molds, by means of a pressure of 2 tons. The further steps involve alternating heating and cooling at temperatures of up to +1050 degrees and -80 degrees Celsius. During this elaborate process, the steel changes its structure, becoming more break-resistant and flexible, without losing any hardness. After these temperature changes, the knives are roughly ground into shape and then polished to a fine finish. The handle is then assembled. Each handle is finely polished, as is the bolster, which ensures perfect balance in Güde knives. The final step is the actual crowning of the knife: sharpening. Each knife is sharpened by hand at an angle of approximately 35 degrees, giving it its famous sharpness. Years of experience in production, an unwavering sense of the right treatment of the steel, and an unerring eye that does not miss even the smallest irregularity or notch are the qualities that make every Güde blacksmith a master of his craft.

Everything under control: The handle materials of Güde knives

The individual knives from Güde differ depending on the series due to the different handle materials. Güde only uses selected materials and high-quality woods such as cherry wood or pear wood. For example, a Güde chef's knife with an olive wood handle consists of up to 500-year-old and selected olive wood. Olive wood is very hard, weather-resistant, strongly grained, and therefore particularly elegant. However, the handle is not dishwasher safe.

The Güde knife series at a glance

Güde Alpha

Each knife in the Güde Alpha series has a blade hand-forged from one piece of chrome-vanadium-molybdenum knife steel. In addition, the Alpha series also offers 2 knives with flexible blades, which function, for example, as boning knives. The handle of the Alpha knife series consists of a robust and easy-care Hostaform. The black and white color combination is classic and adapts perfectly to any kitchen equipment. The Alpha series has the largest variety of models within all Güde series.

Güde Alpha Birne

The blade of the Güde Alpha Birne knife is hand-forged from a single piece. The blade is processed by hand in over 40 steps. The handle scales of all knives in the Güde Alpha Birne series are made of finely textured pear wood. The color and grain may vary slightly from knife to knife. The company's trademark, the palm tree, is depicted on the middle rivet of each knife. The Güde Alpha Birne series was created when Güde was accepted as a preferred supplier of the Jeunes Restaurateurs d'Europe. Jeunes Restaurateurs d'Europe (JRE) is an association of young restaurant owners.

Güde Alpha Fasseiche

The production of the Alpha Fasseiche knife series was carried out in cooperation with Michelin-starred chef Harald Rüssel. The hardening of the stainless steel blade at around -80 °C ensures extreme durability. The blade is hand-sharpened in a further 40 steps. The handle is made of oak wood over 80 years old. The old oak wood is obtained from the barrel wood of old wine barrels and is almost indestructible due to the long aging of the wood. The Güde Alpha Fasseiche knives were awarded the RED DOT DESIGN AWARD in 2007.

Güde Alpha Olive

The Güde Alpha Olive knife series is completely handmade in Germany. All knives in the series have a very good and solid feel due to their own weight. The handle scales of the Güde Alpha Olive knife series are made of up to 500-year-old olive wood. The structure is strongly grained and therefore looks particularly noble and elegant. Each blade of the Güde Alpha Olive knives is rust-free, ice-hardened, and hand-sharpened.

Güde Edition Franz Güde

In honor of the inventor of the "Güde serrated edge," the Franz Güde knife series was created. The world-famous Güde serrated edge is a serrated edge with pointed teeth. The knife series is presented in the classic style of Güde knives from earlier times. They are made of rust-free knife steel and have a handle made of noble cherry wood. Each knife in the Franz Güde edition is of course forged in several work steps, ice-hardened, and handcrafted.

Güde Kappa

All Güde knives in the Kappa series are made from a single piece of chrome-vanadium-molybdenum knife steel from the tip to the end of the handle. This knife steel is hand-forged. The one-piece full metal construction provides a unique weight distribution and balance when cutting. The knife series combines traditional manufacturing methods with innovative and high-quality design. This combination was also the reason why the Güde Kappa series was awarded the Red Dot Design Award.

Güde Synchros

These innovative kitchen knives impress first with their unusual appearance, and then with the "aha" experience when first used. They become one with the hand and are used as one unit - making cutting unusually easy and effortless. As the name "Synchros" already suggests, this series synchronizes hand and knife. It doesn't matter how you hold the knife: with the new line guidance, everyone who works with a Synchros can choose their individual grip position when cutting - depending on the application and personal preference.

Güde Messer Caminada

All knives of the Güde Caminada series have a handle made of Grey Grisons walnut wood. Individual knives such as the bread knife, the ham knife and the Santoku knife are delivered in a noble wooden sheath including gift packaging. Each individual piece was made of chrome-vanadium-molybdenum steel, ice-hardened and is of course rust-free. The handles made of Grey Grisons walnut wood are not waterproof and therefore not suitable for the dishwasher. The knives of the special edition Güde Caminada are handcrafted and have a double-sided sharpening.

Storage of Güde knives

To continue to enjoy your Güde knives after years, we recommend storing your knives in a suitable knife block. This should be solidly crafted. The materiality of the knife block should match the knives. If you have a small kitchen or small kitchen worktop, magnetic strips are a good alternative to a knife block.
