Extra finely sharpened blades made of Cromova 18 steel

The blades of the GLOBAL Bunmei knives are made of Cromova 18 steel. Cromova 18 steel has a hardness of 59 HRC (+-1) and is highly resistant to rust. Unlike the classic series, the blades of the Bunmei knives are sharpened even sharper. Therefore, these knives can be used for even finer cuts. Despite the high durability of the steel, we recommend using these knives only for cutting fish, meat, and vegetables. Hard or frozen food could damage the finely sharpened blade.

Honoki Magnolia Handle

As previously mentioned, the Bunmei knives are adorned with Honoki wood handles. Honoki is a light Japanese magnolia wood with a fine grain and is quite resistant, provided proper care is taken. The handles are symmetrically shaped for European blade variants, and chestnut-shaped for Asian variants. We have listed the exact shape of the handle for each knife. The bolster (transition between blade and handle) is made of black plastic.

Japanese & European Blade Variants

The GLOBAL Bunmei collection mainly offers Japanese blade shapes such as the Santoku, Yanagiba and Tako filleting knives, Nakiri and Usuba vegetable knives, and Deba hacking knives. However, there are also a European chef's knife and two smaller preparation knives. In total, the Bunmei series offers 20 different knives.

Some of the knives, such as the Usuba, Yanagiba, Tako, and Deba, are sharpened on one side only. All other knives have a symmetrical edge and are suitable for both right and left-handed users.
