MIYABI 5000 MCD 67 – uncompromising sharpness and expressive damask aesthetics
The MIYABI 5000 MCD 67 series represents the highest level of Japanese blade craftsmanship, with an uncompromising focus on sharpness, precision, and high-quality workmanship. These knives are aimed at those who want to work consciously with an extremely high-performance cutting tool.
The CRYODOR blade consists of a total of 132 layers of Damascus steel, enclosing a core layer made of extremely hard MC66 powder steel. Through a special hardening process, including ice hardening at -196 °C, the blade achieves a hardness of about 66 HRC. The result is an exceptionally long-lasting sharpness and a very fine cutting edge.
The 132-layer Damascus steel showcases the characteristic Flower-Damask pattern, making each blade visually unique and emphasizing the artisanal quality of the series. Combined with the traditional Honbazuke sharpening, it creates a blade that combines the highest cutting performance with a particularly expressive appearance.
The double-sided Japanese grind is performed by hand. Each blade receives an ultra-sharp Honbazuke edge and is ground to a cutting angle of about 9.5° to 12°. This allows for particularly precise, controlled cuts in meat, fish, vegetables, and herbs.
For safe and balanced handling, the handle is made from unique Black Maple wood in a traditional Japanese D-shape. The natural grain gives each knife an individual look. The decorative logo pin in mosaic design serves as an eye-catcher and is complemented by an elegantly designed end cap.
The balanced relationship between the handle and blade supports precise knife control and allows for controlled, fatigue-free work even during demanding cutting tasks.
MIYABI 5000 MCD 67 is the right choice for you if you are looking for uncompromising sharpness, the highest material quality, and a particularly expressive damask blade while placing value on maximum precision.
