MIYABI 6000 MCT – Japanese Sharpness with Distinct Tsuchime Blade
The MIYABI 6000 MCT series combines high Japanese cutting performance with an expressive, handcrafted blade appearance. It is aimed at those who appreciate precise sharpness, modern steel technology, and a characterful design.
The core of the blade is made from extremely hard MicroCarbide powder steel MC63. This high-quality steel forms the basis for a very fine cutting edge and high edge retention. The core is surrounded by two additional layers of steel that undergo a traditional hammering treatment.
This surface structure, known as Tsuchime, gives the blade its distinctive, textured appearance. At the same time, it emphasizes the artisanal character of the series and makes each blade visually unique.
The CRYODUR blade is hardened using a specially developed process that includes ice hardening at -196 °C. This treatment achieves a very high hardness and offers excellent edge retention as well as precise, controlled cutting performance in everyday kitchen use.
The blade is ground on both sides and features an ultra-sharp Honbazuke edge. Each edge is hand-ground to a very fine cutting angle of about 9.5° to 12°. This allows for clean, precise cuts and a direct cutting feel with meat, fish, vegetables, and herbs.
For safe and comfortable handling, the MIYABI 6000 MCT series is equipped with a shape-stable handle made of Pakka Wood. The specially developed handle shape ensures a balanced balance between the blade and handle, supporting controlled, fatigue-free knife handling for all cutting techniques.
The dark wood appearance of the handle is complemented by a stylish end cap, enhancing the high-quality overall impression of the series. The handle feels pleasant in the hand and provides stability and control even during longer cutting tasks.
