Why is end grain used in manufacturing?

The material consists of end grain processed vertically to the cutting surface from renewable North American maple hardwood. Chopping blocks made of end grain, also known as heartwood, are chopping blocks whose cross-section is the usable surface. This type of wood surface is created when a log is cut across its length. In contrast to a normal cutting board, it is therefore cut across the grain. If you look at the surface more closely, you can recognize segments of the annual rings. Due to the cross-section, moisture can penetrate more easily than with longitudinal wood. The end grain therefore requires a stronger seal.

The cross-section offers higher load capacity

An end grain surface can withstand many times the pressure of a surface running parallel to the fibers (longitudinal wood surface). Sharp knife blades can penetrate between the fibers into the surface, but they damage the fibers significantly less than on a surface of a normal cutting board that lies parallel to the fiber. The wear and tear of the wood fibers is significantly minimized. As a result, your wood block is more resistant and lasts longer.
