Why is end grain used for manufacturing?

The material consists of end grain processed vertically to the cutting surface from renewable North American maple hardwood. End grain chopping blocks, also known as cross-grain blocks, are chopping blocks whose cross-section is the usable surface. This type of wood surface is created when a log is cut across its length. Unlike a regular cutting board, it is cut across the grain. If you look closely at the surface, you can see segments of the growth rings. Due to the cross-section, moisture can penetrate more easily than with long grain wood. Therefore, end grain requires a stronger seal.

The cross-section offers higher durability

An end grain surface can withstand multiple times the pressure compared to a surface running parallel to the fibers (long grain surface). Sharp knife blades can penetrate the surface between the fibers, but they damage the fibers significantly less than on a surface parallel to the grain of a regular cutting board. The wear on the wood fibers is significantly minimized. As a result, your wood block is more resistant and lasts longer.
