When filleting knives become longer, they are no longer called filleting knives, but rather ham knives. Otherwise, everything is pretty much the same. A narrow and thin blade that can be used to slice or carve the finest slices or portions. The ham knife has a 21 cm long, narrow and thin blade made of over 300 layers of steel in a wild damascus style. It is slightly rounded at the tip. Güde knives are hand-forged from a single piece of steel, including the double bolster. This acts as a counterweight and balances the knife perfectly with the blade. Thanks to the ice-hardening process, the steel is particularly robust. The finely polished handle scales made of rare and very hard desert ironwood are embedded in the steel and triple-riveted.
