Details
The combination whetstone from KAI has a 400 grit and a 1000 grit. With this, you are already well-equipped to sharpen your knives on your own.
The 400 grit should only be used on dull or even damaged knives, as it removes material and roughens the blade. Usually, a few strokes on both sides with this coarse grit are sufficient.
The 1000 grit is a universal grit for sharpening and polishing knives. Although more strokes are needed, your blades will be really sharp and well-polished afterward.
If the sharpness and polish are still not sufficient for you, we recommend an additional whetstone with a grit of 3000 or higher.
All whetstones must be soaked for about 15 minutes before use and kept moist during use.
