KAI Seki Magoroku Hekiju Yanagiba 21 cm Left-Handed Model - High-Carbon Stainless Steel - Resin Handle
The small KAI Seki Magoroku Hekiju Yanagiba features a 21 cm long blade made of high-carbon stainless steel with a hardness of 58 HRC (±1). This version is designed for left-handers. The blade achieves high sharpness and durability through special manufacturing technologies, which is not common for high-carbon stainless steel. The Yanagiba, ground on one side to the left, is the traditional filleting knife in Japan. With its narrow and pointed blade, it allows for cutting ultra-thin slices of fish and meat. Thanks to this extremely precise cutting performance, the Yanagiba is the preferred knife for preparing sushi and sashimi.
The handle of this left-handed knife is more rounded compared to the Kinju knives and is made of robust resin with a leather-like embossing. The shape and material also provide a pleasant feel, and the embossing ensures a secure grip. The blade and handle are connected by a ferrule made of high-quality plastic.
