KAI Shun Classic White Bread Knife 23 cm - 32-layer Damascus Steel - Pakkawood Handle
KAI Shun Classic White Bread Knife DM-0704W with a 23 cm long blade made of 32-layer Damascus steel and a chestnut-shaped handle made of light Pakkawood. The edge features a fine serration that is rounder compared to the Solingen serration. This results in a smooth cutting edge, which is particularly advantageous for soft bread.
The core of the Shun Classic blade, extending to the edge, is made of extremely hard VG MAX steel and has a hardness of 61 HRC. VG MAX steel is corrosion-resistant and ensures long-lasting sharpness. The core is surrounded by 32 layers of a Damascus steel composite. This combination makes the blade both hard and elastic, preventing it from breaking, assuming normal use. All Shun Classic blades are symmetrically ground on both sides.
The handle is made of light, ash-colored Pakkawood in a traditionally Japanese chestnut shape. The slight edge on the right side is perfectly adapted to the hand geometry, allowing for a relaxed yet secure grip. The knife can be guided precisely without signs of fatigue.
High-quality resins added to the Pakkawood make the handle particularly durable and moisture-resistant. The tang, which runs completely through the handle, provides stability and balance to the knife. The transition between the blade and handle is marked by a stainless steel bolster, as is the end cap at the handle's end.
