Txogitxu - The Possibly Best Steak in the World?

At first, it may sound like a tongue twister, but among meat lovers, Txogitxu meat is often referred to as the best steak in the world. Txogitxu beef comes from Spain, more precisely from the Basque Country, and is the new superstar in the world of meat. Txogitxu meat is fire-red and has an almost yellow layer of fat. Well, we at Butch had to try it out and fired up our Big Green Egg. But enough talking, steak pictures speak louder than a thousand words:

Ingredients for Txogitxu Steak

  • Salt
  • Pepper
  • Meat: We got ourselves a 1.3 kilogram, bone-aged strip loin. If you need tips on where to order meat online, just ask us.

Step 1: Unpack the meat

Self-explanatory, no comment needed ;-)

Step 2: Let the meat come to room temperature

Although we were outside, "room temperature" is the rule of thumb.

Step 3: Heat up the grill

Heat up the grill - our favorite piece, the Big Green Egg - to full heat.

Step 4: Grill the Txogitxu steak

Grill on high heat for about 2-3 minutes on each side. Then remove from the grill and wrap in aluminum foil to keep the meat warm. Meanwhile, reduce the Big Green Egg to about 100 degrees Celsius and put the Txogitxu meat back on the grill for about 1 hour, without aluminum foil. Also very important: indirect grilling. As we showed you in our video on grilling spare ribs, how to prepare a Big Green Egg for indirect grilling.

Step 5: Remove the meat from the grill

After about 1 hour, your mouth will already be watering, but we still have to wait a little longer. Remove the meat from the grill and wrap it in aluminum foil again and let it rest for 10 minutes.

Step 6: Get the Txogitxu steak ready

Option 1 or...

...you remove the meat from the bone and cut it into slices with a good knife. Then sprinkle a pinch of mild sea salt and freshly ground pepper over it, it doesn't get any better than that!
