Traditionally, Kiritsuke knives are ground on one side and used for filleting. They are equally often used as vegetable knives. The Kiritsuke knives from the KAI Seki Magoroku Kaname series, however, are double-bevelled, i.e. ground symmetrically. That makes these knives, similar to chef’s knives or santoku, universally usable for slicing and filleting fish, meat, vegetables and fruit.
