KAI Shun Premier Tim Mälzer Knife

Tim Mälzer divides opinions. Loved on one hand and frowned upon on the other. We do not wish to pass judgment on the person, as it is not our place. However, we can pass judgment on the Shun Premier cooking knives as the Tim Mälzer Edition.

The blades of the Shun Premier Tim Mälzer series are made from corrosion-resistant 32-layer steel in a Damascus style, forged around a solid core of hard VG-MAX steel. This results in a remarkable hardness of approximately 61 HRC. Without the steel around the cutting core, it would break or be bendable. The combination of the two steels makes the blade slightly flexible yet hard at the same time. Compared to the Shun Classic series, the blade is always slightly wider in this edition.

On the blade, you will find a handcrafted hammered surface, known in Japan as Tsuchime. These indentations look cool and make each knife unique. A small, great side effect: the indentations act like an air cushion, reducing friction and causing the cutting material to stick less to the blade.

The edge of the Shun Premier knives is ground at a very fine, low angle. This gives you very sharp knives, but they are also somewhat more delicate. So please only cut fish, meat, fruits, and vegetables with them. Under no circumstances should you cut bones, frozen items, or other hard things. The blade could chip or bend. However, if you pay attention to this small detail, the sharpness of the knives will impress you. Promise!

The transition between the blade and the handle is a beveled bolster made of stainless steel. This allows you to cut very well with the knife using the overhand grip. Beautiful dark pakkawood was chosen as the handle material. The grain is always different and resembles walnut wood. Ergonomically, oval-shaped, and finely polished, we give top marks in terms of haptics & optics. The handle encloses a full tang (a type of rod) that ensures the necessary balance and stability. The end of the handle is adorned with a stainless steel end cap engraved with Tim Mälzer's kitchen bull. It may not be everyone's cup of tea, but it looks pretty cool!

12 blade shapes are available to choose from. Ambitious hobby cooks, professionals, and Mälzer fans will certainly find what they are looking for. Each knife is beautifully packaged in a wooden box.

It doesn't matter how we or you think about Tim Mälzer. However, we won't hear a word against the Shun Premier Tim Mälzer series. Cutting performance? Top. Handle? Top. Optics? Top. Packaging? Top. Butch gives it the highest rating, as does Stiftung Warentest, by the way.
