The Santoku knife, here in the smaller version with a blade length of 14 cm, is the Japanese equivalent of a chef's knife. You can use it for almost all cutting tasks. It's no wonder it's called the knife of three virtues. With its almost straight blade, you can make precise cuts and use the wide blade like a palette. It's no wonder that Japanese chefs consider their Santoku their most important possession and take care of it.
The 14 cm long blade of the small KAI Shun Premier Tim Mälzer Santoku consists of a VG-Max steel core, wrapped in 32 layers of Damascus steel. This combination gives the small Santoku an enormous sharpness and long-lasting edge retention. In numbers, the blade has an impressive hardness of +/- 61 HRC. An elaborate hammering surface, known in Japan as Tsuchime, is worked into the blade up to the middle. This creates a 3-part texture on the blade, making the small Santoku a real eye-catcher.
Such an elaborately crafted blade demands an equally worthy handle. And the medium-brown, grained Pakkawood handle with a length of 11 cm is no less impressive than the blade. The symmetrical and ergonomic handle shape fits the hand perfectly, whether you cut with your left or right hand. Thanks to the applied lamination, the wooden handle is very resistant to liquids. However, the knife should not be exposed to long water baths or even a dishwasher. A steel plate with an engraving of Tim Mälzer's kitchen bull forms the magnificent finish of the knife.
