The corrosion-resistant and polished stainless steel blades of the Wasabi Black series have an impressive hardness of 56 HRC. While this may not sound like much, the knives were consistently trimmed for functionality, making the hardness appear higher in practice. The durability of the blades surprised us and is more than satisfactory for knives in this price range. An additional advantage is that the blades can be sharpened relatively easily and quickly. The extensive series offers both double-sided and traditionally Japanese single-sided blade shapes.

Black plastic handle with bamboo powder

The water-resistant handle is made of a mixture of bamboo powder and polypropylene. Thanks to this blend, optimal hygiene is ensured and the knives are even up to the strict requirements in professional kitchens. This is also ensured by the fact that the handle completely encloses the blade and is not simply attached like with Japanese knives. This means that absolutely no dirt can accumulate. The handle and blade are connected with a matte black bolster. And yes, they are dishwasher safe. But we cannot stress enough: knives do not belong in the dishwasher!
