Cast iron pans require preparation before their first use, as iron reacts with food and is prone to rust. You can prevent this through a process called seasoning. In this process, oil is heated in the pan, sealing the surface. In the accompanying video, the manufacturer de Buyer shows how you can easily and simply season your pan at home.
Another advantage of seasoning is the resulting patina on the surface. With increasing use, this acts like a non-stick coating and reduces sticking. While the non-stick properties of the patina are only somewhat comparable to plastic-based non-stick coatings, they are completely natural.
