The Material

The Monoblock Alchimy series is made from three-layered multi-layered material. An aluminum core is followed by a layer of stainless steel 18/10 on the inside and a layer of magnetic stainless steel on the outside. This combination ensures a rapid heating of the entire body and an even, homogeneous temperature distribution inside the pot and in the food. The 3-layer material reacts extremely quickly to changes in heat supply, allowing for professional cooking "to the point". In comparison: The Affinity series has a core made of aluminum and aluminum alloys. This cookware heats up even faster than Alchimy. However, for hobby cooks, this small speed difference in cooking is hardly noticeable and not really relevant.

The Alchimy cookware is compatible with all types of stoves and is also suitable for induction. Alchimy is also ideal for preparation in the oven, as the stainless steel handles are heat-resistant.

The Look

The inside of the pots is matte, the outside brushed. This gives the Alchimy collection a chic, contemporary look. The brushed finish is also practical, as small signs of wear are less noticeable here. Water droplets or fingerprints are also not a problem. Speaking of droplets: The edge of the cookware has been designed to allow for uncomplicated and drip-free pouring of the contents.

The Handles

The handle grips on Alchimy are made of curved stainless steel tubing. They are ergonomically designed, waterproof, and firmly riveted. The so-called French curve keeps the handle away from the heat source. Its tubular design slows down the temperature rise and also saves weight. 

Compared to the Affinity series, the handle grips are smaller on Alchimy and also heat up slightly more due to their proximity to the pot. Compared to the heavier stainless steel cast handles on Affinity, the handles on Alchimy are made of stainless steel, resulting in a lighter weight for this collection. 

The Lids

There are currently no special lids available for the Alchimy series. As mentioned, the collection was developed for the needs of the gastronomy industry, where pot and pan lids play a subordinate role. However, all universal glass lids from de Buyer also fit the Alchimy cookware. Here you can find the lids in the shop. Please note: lids with plastic or wooden knobs MUST NOT be used in the oven together with Alchimy.

The Assortment

The collection includes pots and saucepans with different diameters, sauté pans with either a conical or straight shape, and pans of various sizes. Our favorite is the Alchimy wok pan. With this all-rounder, you can cook, fry, steam, blanch, and braise. And of course, stir-fry.

The Dos & Don’ts

For multi-layered cookware, there are a few basic dos and don'ts:

- Do not heat pots and pans empty. Overheating could cause the bottom to warp.

- Choose a moderate temperature setting. The cookware heats up quickly and reaches high temperatures quickly.
  Therefore, it is best to approach the right temperature selection gradually.

- Use the turbo and booster function on induction cookers only to heat larger amounts of liquid, not for frying.

- Only add salt to the pot or pan after the water has already heated up and immediately stir well. Otherwise, corrosion marks may appear that cannot be removed.
  These stains do not affect the function of the cookware, but they are not really attractive either.

- According to the manufacturer's instructions, the collection is dishwasher safe. However, we at Butch recommend gentle hand cleaning. This way, you will enjoy your professional cookware for longer without any problems.
