Güde Alpha Chai Dao Knife 16 cm - CVM Steel - Hostaform Handle Scales
You probably know the Japanese Santoku. But have you heard of the Chai Dao? This is, in addition to the Chinese chef's knife that looks like a cleaver to Europeans, a preferred knife in Chinese kitchens.
The Alpha Chai Dao has a 16 cm long, very wide blade made of rust-free and hand-sharpened chrome-vanadium-molybdenum steel. With the wide blade, you can easily cut larger ingredients and it is also used as a shovel.
Güde knives are hand-forged from a single piece of chrome-vanadium-molybdenum steel, from the tip of the blade to the double bolster. The double bolster, a special feature of Güde knives, provides a counterweight to the blade. The knife is perfectly balanced. The special steel blend and the elaborate manufacturing process with over 30 manual steps give the rust-free blades with a hardness of about 58 HRC a special robustness and durability.
The finely polished Hostaform handle scales are embedded in the steel and triple-riveted. Hostaform plastic is extremely resistant, very hygienic, and feels comfortable in the hand. The Alpha series meets the strict requirements for use in gastronomy and offers the largest variety of models.
