When filleting knives become longer, they are no longer called filleting knives, but rather ham knives. Otherwise, everything is pretty much the same. A narrow and thin blade that can be used to slice or carve finely. The ham knife has a 26 cm long, narrow and thin blade made of rust-free and hand-sharpened chrome-vanadium-molybdenum knife steel with a fine serrated edge. This allows even harder ham to be sliced into fine slices. It is slightly rounded at the tip. Güde knives are hand-forged from a single piece of steel, including the double bolster. This is a counterweight and balances the knife perfectly with the blade. Thanks to the ice-hardening, the steel is particularly robust. Black is also beautiful here: The knives of the Alpha series have inlaid handle shells made of black, finely polished Hostaform and are inseparably connected to the knife thanks to triple riveting.
