Actually, Güde can also do Japanese, at least those blade shapes. The world-famous Santoku is the equivalent of the European chef's knife. A universal knife that is used in Japanese kitchens for almost all cutting tasks. In contrast to the chef's knife, it has a wider, straighter blade that is only slightly rounded at the tip. This is due to the cutting technique preferred in Asia, known as chopping.
The Alpha Walnut Santoku knife with hollow edges has an 18 cm long, wide blade with a slight rounding at the tip made of stainless, hand-ground chrome-vanadium-molybdenum knife steel. Additional, laterally ground hollows prevent the food from sticking to the wide blade due to the resulting air cushion, which often also serves as a scoop here.
Güde knives are hand-forged from a single piece of chrome-vanadium-molybdenum steel, from the tip of the blade to the double bolster. The double bolster, a special feature of Güde knives, serves as a counterweight to the blade. The knife is perfectly balanced. The special blend of steel and the elaborate manufacturing process with over 30 manual steps give the stainless blades, with a hardness of about 58 HRC, exceptional robustness and durability.
The finely polished handle scales made of selected walnut wood are embedded in the steel and triple-riveted. The very hard and durable wood has a strong, elegant grain.
