If you are looking for a high-quality knife for precise filleting and portioning of fish, the KAI Shun Pro Sho Deba with a 21 cm blade is an excellent choice. This traditional Japanese knife combines top-quality materials with thoughtful design and is ideal for demanding kitchen tasks.

The blade is made of corrosion-resistant A10 steel and has a hardness of 61±1 HRC. The single-sided right-hand grind allows for particularly fine and precise cuts, while the hollow grind on the back reduces friction and minimizes sticking of the cut food. This is especially advantageous when filleting fish or cutting poultry.

An optical highlight is the ornamental pattern on the blade, created by an innovative etching technique that gives the knife a unique aesthetic. The handle, made of black laminated Pakkawood, is shaped like a chestnut and sits comfortably in the hand. The chamfered stainless steel ferrule and the end cap made of the same material provide additional stability and balance.

With a blade length of 21 cm and a handle length of 12.5 cm, the knife offers balanced handling. The full tang running through the handle contributes to stabilization and ensures long-lasting durability. Please note that this knife is not dishwasher-safe; it should be washed by hand and carefully dried to preserve the sharpness and quality of the blade.
