The Blade
The blades of the KAI Shun Pro Sho knives are forged from corrosion-resistant A 10 steel and achieve a hardness of 60 (±1) HRC. The knife edge is ground on one side to the right at a 45° angle. The hollow grind on the flat side of the blade creates a kind of air cushion when cutting, which reduces friction and ensures optimal, smooth cutting results.
The Handle
The elegant handle made of black pakkawood emphasizes the sovereign appearance of the Shun Pro Sho knives. The deep black creates a beautiful contrast to the ornamental blade pattern of the knives. The pakkawood used by KAI contains high-quality resins, making this material extremely robust and moisture-resistant.
