This knife features a wide, single-bevelled blade made of corrosion-resistant A10 steel. The single bevel allows for especially fine and precise cuts, ideal for slicing vegetables into thin slices or fine julienne strips. The back of the blade is hollow-ground, which reduces friction and prevents the cut food from sticking to the blade.

The handle is made of black, laminated pakkawood in a traditional chestnut shape. This shape provides a secure and comfortable grip, while the full tang ensures optimal balance and stability. A chamfered stainless steel bolster allows for comfortable handling, even during extended cutting tasks.

With the KAI Shun Pro Sho Usuba you can effortlessly cut vegetables like carrots, cucumbers, or cabbage into uniform slices. It is excellent for precise cutting techniques and is an indispensable tool for lovers of Japanese cuisine.

Please note that this knife is not dishwasher safe. To preserve the sharpness and longevity of the blade, it is recommended to wash the knife by hand after each use and dry it immediately. The handle can be occasionally cared for with a vegetable oil, such as linseed oil or coconut oil, to maintain its beauty and functionality.
