If you are looking for a high-quality knife for preparing sushi and sashimi, the KAI Shun Pro Sho Yanagiba with a 27 cm blade length is an excellent choice. This traditional Japanese filleting knife allows you to make precise, paper-thin cuts that are essential for preparing raw fish.

The blade is made of corrosion-resistant A10 steel and has a hardness of 61±1 HRC. It is single-bevel ground on the right side at a 45° angle, which provides extreme sharpness and enables precise cuts. The flat side of the blade is hollow-ground, reducing friction during cutting and minimizing the sticking of the food. In addition, an ornamental pattern adorns the blade, giving the knife a distinctive aesthetic.

The handle is made of black pakkawood and features an asymmetrical chestnut shape with a soft edge on the right side. This shape ensures a secure and comfortable grip while cutting. A full tang provides optimal balance and stability. The chamfered stainless steel bolster allows comfortable handling, even during longer cutting tasks.

With the KAI Shun Pro Sho Yanagiba you can effortlessly slice fish and other ingredients into paper-thin pieces, making it ideal for preparing sushi and sashimi.
