Güde Alpha Olive Chinese Chef's Knife 18 cm - CVM Steel - Olive Wood Handle Scales
No, the Chinese chef's knife is not a cleaver, even though it may appear so. Unlike a cleaver, the blade is thinner and only meant for cutting. In the Asian cuisine, larger ingredients need to be cut into smaller pieces due to the cooking methods, so wider blades are necessary, which can also serve as a shovel. The handling takes some getting used to, but it is amazing how precise and artistic Chinese chefs can handle these knives.
The Chinese chef's knife from the Alpha Olive series has an 18 cm long, very wide blade made of chrome-vanadium steel. Large ingredients such as cabbage can easily be cut into fine strips and the wide blade can be used as a shovel.
Güde knives are hand-forged from a single piece of chrome-vanadium-molybdenum steel, from the tip of the blade to the double bolster. The double bolster, a special feature of Güde knives, provides a counterweight to the blade. The knife is perfectly balanced. The special steel blend and the elaborate manufacturing process with over 30 manual steps give the rust-free blades with a hardness of about 58 HRC a special robustness and durability.
The finely polished handle scales made of up to 500-year-old, selected olive wood are embedded in the steel and triple-riveted. The very hard and resistant wood has a strong, elegant grain.
