KAI Seki Magoroku Red Wood Yanagiba 21 cm - Carbon 1K6 steel blade - Pakkawood handle
The middle Seki Magoroku Red Wood Yanagiba has a 21 cm long blade made of rust-free carbon 1K6 stainless steel with a hardness of approximately 58 HRC. The polished blade features a single-sided hollow grind that minimizes friction between the cutting material and the blade. This allows for particularly precise cuts, as required in the preparation of sushi, for example. Therefore, the Yanagiba is the preferred knife for filleting in Asian cuisine, serving as the counterpart to the European meat, fillet, or ham knife.
Traditionally designed in a chestnut shape, the handle is made of pakkawood. The handle is particularly durable and resistant to liquids due to high-quality resins added to the wood. A black glossy plastic ferrule connects the narrow, solid handle to the inserted blade. The lightweight handle creates a beautiful balance with the blade, allowing for effortless cutting.
