If you are looking for a high-quality Chinese chef's knife, then the Nesmuk Janus with an 18 cm blade length is just right for you. The blade is made from a special niobium steel, known for its fine structure and high strength. The high niobium content gives the blade exceptional sharpness and long-lasting cutting performance.

Additionally, the blade is coated with a Diamond-like Carbon (DLC) layer. This few micrometers thick, yet extremely hard carbon layer makes the blade resistant to acids, high temperatures, and provides enormous scratch resistance. Another advantage of the DLC coating is the low friction resistance, allowing the knife to glide effortlessly through the cutting material.

The handle of the knife is made from red Micarta, a high-tech plastic that gets its characteristic grain from dyed linen. Micarta is impact-resistant, hard, and shatterproof, as well as resistant to moisture, acids, and alkalis. Therefore, this material is often chosen by professional chefs as handle material.

The transition between the blade and handle is adorned with a matte brushed stainless steel bolster, which is not only visually appealing but also provides additional stability.
