The Blades of Nesmuk Knives

The Nesmuk High-Performance Steel with Niobium

The patented Nesmuk high-performance steel contains the element niobium, a rare Brazilian heavy metal. This heavy metal ensures the finest possible steel structure despite rust resistance. At the same time, the blade becomes stronger and tougher. The result is increased durability and cutting performance. With the applied sharpening, the Janus series knives also achieve a tested sharpness level of approximately 61 HRC.

The Diamond-like Carbon Coating

The Janus series can also score with another highlight: the blade is coated with a diamond-like carbon coating (DLC). This coating technology was developed for the highest demands and makes the knife absolutely resistant to acids, bases, and similar aggressive influences. Although only a few micrometers thick, the layer is very hard and absolutely abrasion-resistant. Small but very effective side effects:

- The knife feels sharper because the coating also has slight anti-stick properties and the knife glides more easily through the cutting material.

- The black glossy coating makes the knives look stunning. 

The types of knives

The range now includes five different types of knives. Only five? Yes, only five. But that's enough, as the newly developed blade shapes combine several blade shapes in one.

- Chef's knife

The all-rounder and suitable for at least 80% of all cutting tasks. The blade is a mixture of European chef's knife and Japanese Santoku. This allows both cutting techniques (rocking & chopping) to be used equally well. The slightly rounded blade is 18 cm or 14 cm long and has a single-sided hollow grind.

- Slicer

Very well suited for all fine work, such as trimming meat or filleting meat, fish, fruit & vegetables. The slightly flexible blade shape is a mixture of common fillet, carving & boning knives, 16 or 26 cm long, 2 mm thick & with a wedge grind.

- Paring knife

With a 9 cm long blade, the paring knife is perfect for prepping & preparing. The blade shape is again a mixture of vegetable, paring & garnishing knives and can therefore also be used for peeling. The blade thickness in the wedge grind is 1.5 mm.

- Bread knife

27 cm blade length with a special serrated edge. Special because two differently designed teeth ensure that soft and hard bread can be cut effortlessly. In addition, this special serrated edge scratches the cutting surface less than conventional bread knives.

- Chinese chef's knife

18 cm blade length and a wide blade make this all-rounder an excellent tool that allows you to work effortlessly in different cutting techniques. And you can lift the cut food directly into the pot, pan or bowl.   

Precious woods and high-tech plastics as handle variations

A great knife is not only defined by an excellent blade. The handles are also of great importance. At Nesmuk, the different handles are perfectly matched to the knives. The ergonomic shape allows for easy handling. The combination of blade, handle shape and the relatively low overall weight allows for precise cuts & fatigue-free work. Selected precious woods such as olive, fossil bog oak, grenadilla, Bahia rosewood are used for the handles. Similarly, high-performance plastics such as Micarta and Juma can be found. The handle and blade are connected with a ferrule made of brushed stainless steel.

Packaging and authenticity certificate included

The knives are delivered in a high-quality, matte black box, including an authenticity certificate.
