Details

If you are looking for a versatile knife for preparing fish and poultry, the Suncraft MU Deba with a blade length of 16.5 cm is an excellent choice. This traditional Japanese deba knife was specially designed for filleting and breaking down (butchering).

The blade is made of high-quality Japanese molybdenum-vanadium steel and has a hardness of 58±1 HRC. The single-bevel grind allows for precise cuts, with the front third of the blade ideal for filleting and the rear portion suitable for cutting through smaller bones. Please note that cutting through bones should be done with a pressing motion rather than chopping.

The bamboo pakkawood handle is oval-shaped and tapers toward the bolster, supporting ergonomic handling. The lightweight, beveled stainless-steel bolster surrounds the full tang and provides additional stability.

The MU Collection by Suncraft was developed in collaboration with the Italian designer duo Carallo & Grandis and Michelin-starred chef Pietro Leemann. The low weight of the knives allows for fatigue-free cutting even during extended use. The simple, modern design with the light bamboo pakkawood handle gives the knives an attractive appearance.

Please note that this knife is not suitable for left-handed users. For care, it is recommended to clean the knife by hand and to use forgiving cutting surfaces such as wood or plastic to preserve the blade's sharpness.
