The Alpha Birne boning knife with its 13 cm long blade is designed for separating meat from the bone, also known as boning. The double-sided, narrow and pointed blade made of rust-free chrome-vanadium-molybdenum steel allows for very precise cuts along the bone and the spine. The flexible steel adapts even better to the curves.
Güde knives are hand-forged from a single piece of chrome-vanadium-molybdenum steel, from the tip of the blade to the double bolster. The double bolster, a special feature of Güde knives, provides a counterweight to the blade. The knife is perfectly balanced. The special steel blend and the elaborate manufacturing process with over 30 manual steps give the rust-free blades with a hardness of about 58 HRC a special robustness and durability.
The finely polished pear wood handle scales are embedded in the steel and triple-riveted. Pear wood is extremely hard with a fine-grained, velvety texture. The Alpha Birne series was launched on the occasion of Güde's inclusion in the circle of Preferred Suppliers by the Jeunes Restaurateurs d'Europe, Section Germany. The association's logo is engraved in the double bolster.
