No, the Chinese chef's knife is not a cleaver, even though it may appear so. Unlike the cleaver, the blade is thinner and intended only for cutting. Since large ingredients in Asian cuisine need to be cut quite small due to cooking methods, wider blades are necessary, which can also serve as a scoop. Handling it takes some getting used to, but it is astonishing how precise, even artistic, Chinese chefs can be with these knives.
The Chinese chef's knife from the Alpha Pear series has an 18 cm long, very wide blade made of chrome-vanadium knife steel. Large ingredients such as cabbage can be easily cut into fine strips, and the wide blade can be used as a scoop.
Güde knives are hand-forged from a single piece of chrome-vanadium-molybdenum steel, from the tip of the blade to the double bolster. The double bolster, a special feature of Güde knives, acts as a counterbalance to the blade. The knife is perfectly balanced. The special blend of steel and the elaborate manufacturing process with over 30 manual steps give the stainless blades a special robustness and durability, with a hardness of approximately 58 HRC.
The finely polished handle scales made of pear wood are embedded in the steel and triple-riveted. Pear wood is extremely hard with a finely structured, velvety grain. The Alpha Pear series was launched on the occasion of Güde's inclusion by the Jeunes Restaurateurs d'Europe, Germany section, into the circle of Preferred Suppliers. The association's logo is engraved in the double bolster.
