Since large ingredients in Asian cuisine need to be cut into small pieces due to cooking methods, wider blades are necessary, which can also serve as a shovel. The handling takes some getting used to, but it is amazing how precise and artistic Chinese chefs can handle these knives.
The Chinese chef's knife from the Alpha Birne series has an 18 cm long, very wide blade made of chrome-vanadium steel. Large ingredients such as cabbage can easily be cut into fine strips and the wide blade can be used as a shovel.
Güde knives are hand-forged from a single piece of chrome-vanadium-molybdenum steel, from the tip of the blade to the double bolster. The double bolster, a special feature of Güde knives, provides a counterweight to the blade. The knife is perfectly balanced. The special steel blend and the elaborate manufacturing process with over 30 manual steps give the rust-free blades with a hardness of about 58 HRC a special robustness and durability.
The finely polished pear wood handle scales are embedded in the steel and triple-riveted. Pear wood is extremely hard with a finely structured, velvety grain. The Alpha Birne series was launched on the occasion of Güde's inclusion by the Jeunes Restaurateurs d'Europe, Section Germany, into the circle of preferred suppliers. The association's logo is engraved in the double bolster.
