Actually, Güde can also do Japanese, at least in terms of blade shapes. The world-famous Santoku is the equivalent of the European chef's knife. A universal knife that is used in Japanese kitchens for almost all cutting tasks. Unlike the chef's knife, it has a wider, straighter blade that is only slightly rounded at the tip. The Alpha Birne Santoku knife with kullens has an 18 cm long, wide blade with a slight curve at the tip made of rust-free and hand-ground chrome-vanadium-molybdenum knife steel. Additional kullens ground on the side prevent the food from sticking to the wide blade, which also often serves as a shovel.
Güde knives are hand-forged from a single piece of chrome-vanadium-molybdenum steel, from the tip of the blade to the double bolster. The double bolster, a special feature of Güde knives, provides a counterweight to the blade. The knife is perfectly balanced. The special steel blend and the elaborate manufacturing process with over 30 manual steps give the rust-free blades with a hardness of about 58 HRC a special robustness and durability.
The finely polished pear wood handle scales are embedded in the steel and triple-riveted. Pear wood is extremely hard with a fine-grained, velvety texture. The Alpha Birne series was launched on the occasion of Güde's inclusion in the circle of preferred suppliers by the Jeunes Restaurateurs d'Europe, section Germany. The association's logo is engraved in the double bolster.
