Güde Alpha Pear Chef's Knife 21 cm - CVM Steel - Pear Wood Handle Scales

The middle Alpha Birne chef's knife has a wide and 21 cm long blade made of rust-free and hand-sharpened chrome-vanadium-molybdenum knife steel. The blade is rigid and slightly rounded towards the tip. This makes it easy and precise to work with the rocking cut technique. The chef's knife is suitable for almost 90% of all cutting tasks.
Güde knives are hand-forged from a single piece of chrome-vanadium-molybdenum steel, from the tip of the blade to the double bolster. The double bolster, a special feature of Güde knives, provides a counterweight to the blade. The knife is perfectly balanced. The special mixture of steel and the elaborate manufacturing process with over 30 manual steps give the rust-free blades with a hardness of about 58 HRC a special robustness and durability.
The finely polished pear wood handle scales are embedded in the steel and triple-riveted. Pear wood is extremely hard with a fine-grained, velvety texture. The Alpha Birne series was launched on the occasion of Güde's inclusion by the Jeunes Restaurateurs d'Europe, Section Germany, in the circle of preferred suppliers. The association's logo is engraved in the double bolster.
