KAI Shun Classic filleting knife DM-0761 with an 18 cm long blade made of flexible AUS8A steel (not Damascus) and a chestnut-shaped handle made of dark Pakkawood. AUS8A steel is also extremely hard and rust-resistant. This steel can be made both hard and flexible and is characterized by very high robustness.

The core of the Shun Classic blade up to the edge consists of extremely hard VG MAX steel and has a hardness of 61 HRC. VG MAX steel is corrosion-resistant and stands for lasting sharpness. The core is covered with 32 layers of a Damascus steel composite. This combination makes the blade hard and elastic at the same time and cannot break. Normal use is of course assumed. All Shun Classic blades are symmetrically ground on both sides.

The handle is made of dark Pakkawood in a traditional Japanese chestnut shape. The slight edge on the right side is perfectly adapted to the hand geometry and allows for a relaxed and equally secure grip. The knife can be guided precisely without fatigue.

High-quality resins added to the Pakkawood make the handle particularly durable and moisture-resistant. The tang, which runs completely through the handle, ensures stability and balance of the knife. The transition between blade and handle is marked by a stainless steel bolster, as is the end cap at the end of the handle.
