Your culinary experience begins with the KAI Shun Classic Kiritsuke 15 cm – a knife that combines traditional Japanese forging with modern technology. The blade is made of 32 layers of stainless Damascus steel surrounding a core of VG-MAX steel. This combination gives the blade a hardness of 61±1 HRC and provides exceptional sharpness and durability.

With a blade length of 15 cm, the Kiritsuke knife is excellent for precise cutting tasks. Whether you chop fine herbs, cut vegetables into even pieces, or fillet fish – this knife handles every task with ease. The distinctive straight blade shape with a pointed tip allows particularly precise cuts.

The ergonomically shaped handle made of dark Pakkawood sits comfortably in the hand and, thanks to the traditional chestnut shape with a smooth edge on the right side, offers a secure grip. The full tang provides optimal balance and stability so you can work without fatigue even during longer use.

Please note that this high-quality knife is not dishwasher safe. To preserve the sharpness and longevity of the blade, it is recommended to wash the knife by hand after use and dry it thoroughly. Occasionally oiling the handle with vegetable oil helps maintain the wood.
