If you are looking for a versatile kitchen knife that is suitable for both precise cuts and heavier tasks, the KAI Shun Classic Kiritsuke with a 20 cm blade is just right for you.

The blade of this knife consists of a core made from VG-MAX steel, known for its hardness and durability. This core is wrapped in 32 layers of stainless Damascus steel, which not only gives the blade an attractive pattern but also makes it flexible and stable. With a hardness of 61±1 HRC, the edge stays sharp for a long time and allows for precise work.

The handle, made of dark Pakkawood, is shaped in a traditional chestnut style and is particularly comfortable for right-handed users. The soft edge on the right side provides additional comfort and safety while cutting. A full tang in the handle ensures optimal balance and stability of the knife.

The Kiritsuke knife is characterized by its distinctive, pointed blade shape, originally a combination of Yanagiba and Nakiri. This shape is excellent for filleting fish, cutting paper-thin slices of vegetables or meat, making it a true all-rounder in the kitchen. Whether you are cutting fine julienne strips of carrots or precisely portioning a delicate fish fillet — this knife makes it effortless.

Please note that this high-quality knife is not dishwasher-safe. To preserve the sharpness and longevity of the blade, it is recommended to wash the knife by hand after use and dry it thoroughly.
