Symmetrically ground Santoku with an 18 cm blade
The Santoku is the Japanese counterpart to the chef’s knife and is likewise suitable for more than 90% of all cutting tasks. The blade profile of both blade types is now similar. However, the blade and ricasso are somewhat wider with the characteristic belly.
The blade is made of Cromova 18 steel with a hardness of 59(±1) HRC. Unlike the regular Global knives, the blades of the Bunmei series are ground finer and therefore appear sharper.
The handle of the Bunmei series is made of honoki wood, a light Japanese magnolia with a fine grain. On this knife the handle is also symmetrically shaped. The transition between handle and blade is marked by a ferrule made of plastic.
