The Alpha Oak Barrel Boning Knife with its 13 cm long blade is designed for separating meat from the bone, also known as boning. The double-sided, narrow and pointed blade made of rust-free chrome-vanadium-molybdenum steel allows for very precise cuts along the bone and spine.
Güde knives are hand-forged from a single piece of chrome-vanadium-molybdenum steel, from the tip of the blade to the double bolster. The double bolster, a special feature of Güde knives, provides a counterweight to the blade. The knife is perfectly balanced. The special steel blend and the elaborate manufacturing process with over 30 manual steps give the rust-free blades with a hardness of about 58 HRC a special robustness and durability.
The finely polished handle scales made of oak wood from wine barrels over 80 years old, called stave wood, are embedded in the steel and triple-riveted. Due to the long aging process, the coarse-textured wood is extremely hard and almost indestructible. The Alpha Oak Barrel series was created in collaboration with Michelin-starred chef Harald Rüssel and his wife Ruth. Harald Rüssel's signature can be found as a laser engraving on each blade.
