Güde Alpha Barrel Oak Peeling Knife 6 cm - CVM Knife Steel - Handle Scales Made from Wine Barrel Oak Wood
With any knife, peeling is possible, but with a paring knife, vegetables & fruits can be shaped even more perfectly. In kitchen jargon, peeling and shaping is referred to as "tournieren." This is when crescent-shaped potatoes are often carved.
The Alpha Barrel Oak paring knife has a 6 cm long blade with a curved tip made of stainless, hand-sharpened chrome-vanadium-molybdenum knife steel. The curved tip, also known as a "Kniepe," allows for extremely precise fine and round cuts.
Güde knives are hand-forged from a single piece of chrome-vanadium-molybdenum steel, from the blade tip to the double bolster. The double bolster, a unique feature of Güde knives, acts as a counterbalance to the blade. The knife is perfectly balanced. The special mix of steel and the elaborate manufacturing process with over 30 manual steps give the stainless blades a special robustness and durability, with a hardness of about 58 HRC.
The finely polished handle scales made from oak wood of wine barrels over 80 years old, called staves, are embedded in the steel and triple-riveted. Due to the long aging process, the coarsely structured wood is extremely hard and almost indestructible. The Alpha Barrel Oak series was developed in collaboration with star chef Harald Rüssel and his wife Ruth. Harald Rüssel's signature is laser-engraved on each blade.
