Güde Alpha Barrel Oak Paring Knife 10 cm - CVM Steel - Handle Scales made of Wine Barrel Oak Wood
The Spick & Garnier knife is primarily designed for larding meat, as the tip allows for precise and accurate cuts. At the same time, this knife can also be used to beautifully cut fruits and vegetables for decoration. Spick & Garnier knives can confidently be called small all-purpose knives, suitable for fine cutting work, peeling, and so on.
The medium Alpha Fasseiche larding knife has a 10 cm long, narrow, and pointed blade made of rust-free and hand-sharpened Chrom-Vanadium-Molybdenum knife steel. The blade is rigid and allows for good guidance.
Güde knives are hand-forged from a single piece of Chrom-Vanadium-Molybdenum steel, from the tip of the blade to the double bolster. The double bolster, a special feature of Güde knives, provides a counterweight to the blade. The knife is perfectly balanced. The special steel blend and the elaborate manufacturing process with over 30 manual steps give the rust-free blades with a hardness of about 58 HRC a special robustness and durability.
The finely polished handle scales made of oak wood from over 80-year-old wine barrels, called barrel staves, are embedded in the steel and triple-riveted. Due to the long aging process, the coarse-textured wood is extremely hard and almost indestructible. The Alpha Fasseiche series was created in collaboration with Michelin-starred chef Harald Rüssel and his wife Ruth. Harald Rüssel's signature can be found as a laser engraving on each blade.
