In the Asian region, larger ingredients need to be cut into small pieces due to the cooking methods, so wider blades are necessary, which also serve as a shovel. The handling takes some getting used to, but it is amazing how precise and artistic Chinese chefs can handle these knives.
The Chinese chef's knife from the Alpha Oak Barrel series has an 18 cm long, very wide blade made of chrome-vanadium steel. Large ingredients such as cabbage can be easily cut into fine strips and the wide blade can be used as a shovel.
Güde knives are hand-forged from a single piece of chrome-vanadium-molybdenum steel, from the tip of the blade to the double bolster. The double bolster, a special feature of Güde knives, provides a counterweight to the blade. The knife is perfectly balanced. The special steel blend and the elaborate manufacturing process with over 30 manual steps give the rust-free blades with a hardness of approximately 58 HRC a special robustness and durability.
The finely polished handle scales made of oak wood from wine barrels over 80 years old, called stave wood, are embedded in the steel and triple-riveted. Due to the long aging process, the coarse-textured wood is extremely hard and almost indestructible. The Alpha Oak Barrel series was created in collaboration with Michelin-starred chef Harald Rüssel and his wife Ruth. Harald Rüssel's signature can be found as a laser engraving on each blade.
