The Alpha Barrel Oak cleaver or chopping knife has an 18 cm long, wide, and thick blade made of stainless, hand-sharpened chrome-vanadium-molybdenum knife steel. The blade is extremely stable, and you can cut through bones without worrying about your blade. But please watch your fingers!
Güde knives are hand-forged from a single piece of chrome-vanadium-molybdenum steel, from the tip of the blade to the double bolster. The double bolster, a special feature of Güde knives, acts as a counterbalance to the blade. The knife is perfectly balanced. The special mix of steel and the elaborate manufacturing process with over 30 manual steps give the stainless blades with a hardness of about 58 HRC a special robustness and longevity.
The finely polished handle scales made from oak wood of wine barrels over 80 years old, called staves, are embedded in the steel and triple-riveted. Due to the long aging process, the coarsely structured wood is extremely hard and almost indestructible. The Alpha Barrel Oak series was created in collaboration with star chef Harald Rüssel and his wife Ruth. Harald Rüssel's signature can be found as a laser engraving on each blade.
