Güde Alpha Barrel Oak Preparation Knife 16 cm - CVM Steel - Handle Scales made of Wine Barrel Oak Wood
The preparation knife resembles in shape a boning and garnishing knife and is often the beloved knife, especially among female chefs. If the chef's knife appears too wide and heavy to you, the preparation knife is the perfect alternative.
The Alpha Oak Barrel Preparation Knife has a 16 cm long, narrow blade made of rust-free and hand-sharpened chrome-vanadium-molybdenum knife steel. Despite the narrow blade, the knife is stiffer than, for example, a fillet knife.
Güde knives are hand-forged from a single piece of chrome-vanadium-molybdenum steel, from the tip of the blade to the double bolster. The double bolster, a special feature of Güde knives, provides a counterweight to the blade. The knife is perfectly balanced. The special steel blend and the elaborate manufacturing process with over 30 manual steps give the rust-free blades with a hardness of about 58 HRC a special robustness and durability.
The finely polished handle scales made of oak wood from over 80-year-old wine barrels, called staves, are embedded in the steel and triple-riveted. Due to the long maturation, the coarse-structured wood is extremely hard and almost indestructible. The Alpha Oak Barrel series was created in collaboration with Michelin-starred chef Harald Rüssel and his wife Ruth. Harald Rüssel's signature can be found as a laser engraving on each blade.
