Steaks require either a very sharp and thin blade or a blade with a very fine serration. This will also finely cut any tendons that may be present.
The Alpha Oak Barrel Steak Knife has a 12 cm long blade made of chrome-vanadium-molybdenum steel with a very fine serration. If you come across any tendons in your steak, you can easily cut through them with this knife.
Güde knives are hand-forged from a single piece of chrome-vanadium-molybdenum steel, from the tip of the blade to the double bolster. The double bolster, a special feature of Güde knives, provides a counterbalance to the blade. The knife is perfectly balanced. The special steel blend and the elaborate manufacturing process with over 30 manual steps give the rust-free blades with a hardness of approximately 58 HRC a special robustness and durability.
The finely polished handle scales made of oak wood from wine barrels over 80 years old, called stave wood, are embedded in the steel and triple-riveted. Due to the long aging process, the coarse-textured wood is extremely hard and almost indestructible. The Alpha Oak Barrel series was created in collaboration with Michelin-starred chef Harald Rüssel and his wife Ruth. Harald Rüssel's signature can be found as a laser engraving on each blade.
