Global Bunmei Yanagi Sahimi Knife 21 cm single-edged - Cromova 18 Steel - Honoki Wood Handle
Single-bevel right-handed Yanagiba with a 21 cm blade length
Yanagiba knives are THE knives in Japan when it comes to filleting fish for, for example, sushi. Precise cuts can be made with this knife and portions can be sliced paper-thin. With the pointed blade you can also very well trim meat.
The blade is made from Cromova 18 steel with a hardness of 59(±1) HRC. Unlike the regular Global knives, the blades of the Bunmei series are ground finer and therefore appear sharper.
The handle of the Bunmei series is made from Honoki wood, a light Japanese magnolia wood with a fine grain. On this knife the handle is in a D-shaped (kastanienform) profile. The transition between handle and blade is marked by a ferrule made of plastic.
