The Kappa boning knife with its 13 cm long blade is designed for separating meat from the bone, also known as boning. The double-sided, narrow and pointed blade made of rust-free chrome-vanadium-molybdenum steel allows for very precise cuts along the bone and spine.
Güde knives are hand-forged from a single piece of chrome-vanadium-molybdenum steel, from the tip of the blade to the double bolster. The double bolster, a special feature of Güde knives, provides a counterweight to the blade. The knife is perfectly balanced. The special steel blend and the elaborate manufacturing process with over 30 manual steps give the rust-free blades with a hardness of about 58 HRC a special robustness and durability.
The blade and handle are made from a single piece of steel. The extremely hygienic handle with its polished surface fits perfectly and securely in the hand. The full metal construction provides the knives with a unique weight distribution and balance.
