With any knife, peeling can actually be done, but with the paring knife, vegetables & fruits can be brought into shape even more perfectly. In kitchen jargon, peeling and shaping is called "tournieren." This is when crescent-shaped potatoes are often carved.
The Kappa paring knife has a 6 cm long blade with a curved tip made of stainless, hand-sharpened chrome-vanadium-molybdenum knife steel. The curved tip, also known as a "kneepe," allows for extremely precise fine and round cuts.
Güde knives are hand-forged from a single piece of chrome-vanadium-molybdenum steel, from the tip of the blade to the double bolster. The double bolster, a special feature of Güde knives, acts as a counterweight to the blade. The knife is perfectly balanced. The special mix of steel and the elaborate manufacturing process with over 30 manual steps give the stainless blades a special robustness and durability with a hardness of about 58 HRC.
Blade & handle are made from a single piece of steel. The highly hygienic handle with its smoothly polished surface fits optimally and securely in the hand. Due to the full metal construction, the knives offer a unique weight distribution and balance.
