The preparation knife is in the shape of a boning and garnishing knife, often the preferred knife for those who find the chef's knife too wide and heavy. Due to its slightly narrower blade, it is not quite as rigid as a chef's knife, but this can often be an advantage. The 16 cm long, narrow and pointed blade is made of rust-free and hand-sharpened chrome-vanadium-molybdenum knife steel. Despite the narrow blade, the knife still appears more stable than, for example, a filleting knife. The knife, including the handle and double bolster, is hand-forged from a single piece of steel. This serves as a counterweight to the blade and balances it perfectly. Thanks to the ice-hardening, the steel is particularly robust. Manufacturer's number: 0765/16.
