Güde Kappa fillet knife 16 cm flexible - blade and handle made of CVM steel
A filleting knife is intended for...? Well, for filleting of course. Unlike a chef's knife, it has a narrower and thinner blade. This allows you to, for example, trim meat and fish, i.e. remove skin and tendons. And then cut it into paper-thin slices, i.e. fillet it.
The flexible Kappa filleting knife has a thin and narrow blade with a length of 16 cm made of rust-free and hand-sharpened chrome-vanadium-molybdenum knife steel. The flexible steel adapts even better to the tendon. Of course, you can also use the filleting knife for many other cutting tasks.
Güde knives are hand-forged from a single piece of chrome-vanadium-molybdenum steel, from the tip of the blade to the double bolster. The double bolster, a special feature of Güde knives, provides a counterweight to the blade. The knife is perfectly balanced. The special steel blend and the elaborate manufacturing process with over 30 manual steps give the rust-free blades with a hardness of approx. 58 HRC a special robustness and durability.
The blade and handle are made of a single piece of steel. The extremely hygienic handle with its smooth polished surface fits perfectly and securely in the hand. Due to the full metal construction, the knives offer a unique weight distribution and balance.
