Güde Kappa Filleting Knife 16 cm Flexible - Blade and Handle CVM Steel
A filleting knife is for…? Well? Exactly, it's meant for filleting. Unlike a chef's knife, it has a narrower and thinner blade. With it, you can, for example, trim meat and fish, meaning remove skin and tendons. And then cut them into wafer-thin pieces, in other words, fillet.
The flexible Kappa filleting knife has a thin and narrow blade with a length of 16 cm made from stainless & hand-sharpened chrome-vanadium-molybdenum knife steel. The flexible steel adapts even better to the tendon. Of course, you can also use the filleting knife for many other cutting tasks.
Güde knives are hand-forged from a single piece of chrome-vanadium-molybdenum steel, from the tip of the blade to the double bolster. The double bolster, a special feature of Güde knives, acts as a counterweight to the blade. The knife is perfectly balanced. The special mixture of the steel and the elaborate manufacturing process with over 30 manual steps give the stainless blades with a hardness of about 58 HRC a special robustness and durability.
Blade & handle are made from a single piece of steel. The highly hygienic handle with the smoothly polished surface fits optimally and securely in the hand. Due to the full metal construction, the knives offer a unique weight distribution and balance.
